tools and ingredients to make chocolate mummy cookies
To make cake mix cookies, you only need a box of chocolate cake mix, large eggs, and vegetable or canola oil.
You’ll need a couple baking trays.
Line your trays with parchment paper for best results and transfer baked cookies to a baking rack to fully cool.
A one-tablespoon cookie scoop helps portion your dough perfectly.
While our recipes provide both the metric and non-metric amounts, for best results, we recommend a digital scale.
I use an oven thermometer for accuracy. (This is how I know my oven runs 25 degrees cold.)
how to make icing and decorate cookies
For the icing, you'll need powdered sugar (confectioner's sugar) and milk. You may use any type of milk desired, including plant-based.
Add a pinch of salt for best results.
You may also add some vanilla extract for flavor. Keep in mind vanilla will tint the icing a bit, unless you add clear vanilla extract. You may also brighten icing with white food coloring.
To pipe the icing on the cookies, I suggest using a 12-inch disposable decorating bag.
And of course you'll need candy eyes! (TIP: If you can't find candy eyes, use mini chocolate chips.)
Fill the decorating bag with the icing, close tightly with a rubber band, and snip the tip. Pipe icing back and forth and add candy eyes.
Icing will dry to the touch within a few yours. (But will not dry hard.)

chocolate mummy cookies
Start with 3-ingredient chocolate cake mix cookies to make EASY mummy cookies for Halloween! Simple icing recipe included.
Ingredients
- 15.25 ounce box of chocolate cake mix
- 2 large eggs
- ⅓ cup vegetable or canola oil (2.6 ounces)
- ICING:
- 2 cups confectioner's sugar
- 3 tablespoons milk (any kind)
- pinch salt
- ½ teaspoon pure vanilla extract (optional)
- Candy eyes
- 12-inch disposable decorating bag and rubber band
Instructions
- Preheat oven to 350 degrees F. Line baking trays with parchment paper and set aside.
- In a large bowl with a hand mixer or in a standing mixer, place the cake mix, eggs, and oil. Stir very well. Chill for 30 minutes.
- Use a 1-tablespoon cookie scoop to drop rounded tablespoons of dough on the baking trays, one to two inches apart.
- Bake until set and top starts to crack, 12 to 14 minutes.
- After 15 minutes, transfer to baking racks to cool completely.
- To make the icing, in a large bowl, place the confectioner's sugar, milk, salt, and extract (if using). Stir very well with a whisk.
- If the icing is too thick, add a bit more milk. If too thin, add additional confectioner's sugar.
- Transfer to the decorating bag, close with a rubber band, and snip the top.
- Pipe back and forth and adhere candy eyes. Work with a few cookies at a time so the icing doesn't harden before you add the eyes.
- Icing will harden in several hours, but not fully, so use caution stacking the cookies.
Notes

- Icing will set well within a few hours and very well overnight. However, the icing does not harden fully.
- For a shortcut, use store-bought frosting.
