Lightly sweet and full of peanut buttery flavor, these 5-ingredient flourless peanut butter cookies are naturally gluten-free.
They are melt-in-your mouth delicious. (I ate three before I even pulled out my camera to photograph them.)

how to make gluten free (no flour) peanut butter cookies
You will need 5 ingredients:
PEANUT BUTTER
You'll need 1 cup of peanut butter. I highly recommend a common brand such as Jif or Skippy. The natural peanut butters with separated oil won't work as well in this recipe.
LIGHT BROWN SUGAR
While some recipes for flourless peanut butter cookies call for granulated sugar, I think light brown sugar in a smaller amount adds just the right amount of flavor and sweetness. I used ¾ cup of packed light brown sugar.
BAKING SODA
A ½ teaspoon of baking soda gives your cookies rise. These cookies are a good size, about the palm of your hand. Be sure not to use baking powder as a substitute.
SALT
A pinch of salt (about ¼ teaspoon) pulls together the flavors of these cookies.
EGG
One large egg works to keep the dough smooth and combined.

TOOLS YOU WILL NEED:
- Baking trays
- Parchment paper
- 1 ½ tablespoon cookie scoop (optional, but handy)
LET'S MAKE COOKIES
These cookies are so easy to make! Mix up all the ingredients, scoop up the dough, and bake until ready.
Preheat oven to 350 degrees F and line two baking trays with parchment paper.
STEP ONE: Prepare your dough
In the bowl of a standing mixer fitted with the flat beater OR in a bowl with an electric hand mixer, place the peanut butter, brown sugar, baking soda, and salt. Mix well.
Add the egg and mix well.

STEP TWO: Scoop and bake
Scoop dough into balls with about 1 ½ tablespoons of dough. Place on the tray 2-inches apart.
Slightly flatten each cookie by gently pressing a fork on the cookie. Repeat, rotating the fork 90 degrees.
Bake 10 to 12 minutes until edges are golden.
Let cool completely on baking trays (cookies will be soft when fresh out of the oven).
Makes 16 cookies.

I recommend using an oven thermometer to be sure your oven's temperature is accurate.
I do NOT recommend using peanut butter that needs to be stirred.
