We love no bake cookies around here, all year long and for any occasion. They are perfect for a summer dessert since you don't have to turn on the oven, but just as yummy to add to your Christmas cookie trays.
The bottom and top layers are similar to the buttery oatmeal layers of these raspberry crumble bars, minus the flour and baking. A thick layer of chocolate and peanut butter rests between.

You only need 6 ingredients!
You'll first heat together salted butter with light brown sugar and pure vanilla extract. Combined with Quick, 1-minute oats, this makes the crust and topping.
Melt together semi-sweet chocolate chips and peanut butter for the center.
We recommend peanut butter that does NOT need stirring because of oil separation.
Here, I use an 8 x 8-inch square baking pan. You may use 9-inch, but your treats will be thinner.
For best results, instead of greasing the pan, I line the pan with non-stick foil. That way you can easily lift the bars from the pan to cut.
how to store your bars
Store the bars in an air-tight container at room temperature for 3 days, or in the refrigerator for a week. You may also freeze the bars for 3 months.

Rich, delicious no bake chocolate peanut butter bars with oatmeal are so EASY to make. Only 6 ingredients, with a fudgy center.
Ingredients
- 1 cup salted butter (226 grams)
- ½ cup packed light brown sugar (104 grams)
- 1 teaspoon pure vanilla extract
- 3 cups QUICK oats (300 grams)
- 1 cup semi-sweet chocolate chips (6 ounces)
- ½ cup peanut butter (no stir recommended, 128 grams)
Instructions
- Line an 8-inch square baking pan with non-stick foil. (You may add a spray of non-stick spray to make these even easier to serve.) Set aside.
- In a saucepan, melt the butter over medium-low heat. Stir in the brown sugar and vanilla extract.
- Stir in the oatmeal. Heat for 3 minutes, stirring frequently.
- Spread a bit more than half of the mixture to evenly cover the bottom of the prepared baking pan. Transfer the rest of the mixture to a bowl. Set aside.
- In a new saucepan (or the same saucepan, cleaned) add the chocolate and peanut butter over low heat. Heat, stirring frequently until the chocolate chips have almost melted. Remove from heat and stir very well until the chips are fully melted and the mixture smooth.
- Spread evenly over the oats.
- Refrigerate for 15 to 20 minutes to slightly set the chocolate.
- Evenly spread the remaining oatmeal mixture over the top.
- Cool for at least two hours.
- Let the bars come to room temperature and cut into 9 or 16 squares.
Notes
We suggest weighing ingredients with a digital scale for best results.
It's best to use peanut butter that is not separated and that does not need to be stirred first.
