We're big fans of 3-ingredient cake mix cookies around here. The spice cake mix cookies might be my favorites.
I adore the seasonal, spicy flavors of cinnamon, nutmeg, and cloves. Rolling the cookies in cinnamon sugar is optional, but I highly recommend it! Our pumpkin chocolate chip cookies are also full of fall spices. And cinnamon roll cookies are delicious.
These cookies would make a great addition to your Thanksgiving dessert table or your Christmas cookie trays.

You'll of course need a box of spice cake mix. I used the 15.25 ounce Duncan Hines spice cake mix brand, but you may use Betty Crocker as well.
Mix in large eggs and either vegetable or canola oil (a type of vegetable oil) for easy cookies. And a cinnamon sugar mixture is optional, but recommended.
You will need two to three baking trays. If you reuse a baking tray, be sure it's completely cool before adding cookie dough!
Line your trays with parchment paper for best results.
A one-tablespoon cookie scoop helps portion your dough perfectly. Scoop rounded tablespoons. For larger cookies, you may use a two-tablespoon scoop, and add a couple minutes of baking time.
While our recipes provide both the metric and non-metric amounts, for best results, we recommend a digital scale.
I use an oven thermometer for accuracy. (This is how I know my oven runs 25 degrees cold.)
how to make cinnamon sugar
For this recipe, you can sprinkle cinnamon sugar over the unbaked cookies.
To make cinnamon sugar, fully combine ¼ cup granulated sugar with 1 ½ teaspoons ground cinnamon.
You may have cinnamon sugar leftover. Store in a sealed container in a dark place for up to a year.

EASY spice cake mix cookies recipe! Start with this 3-ingredient seasonal, spicy, and flavorful cookie rolled in cinnamon sugar.
Ingredients
- 1 box (15.25 ounces) spice cake mix
- 2 large eggs
- ⅓ cup vegetable or canola oil
- OPTIONAL:
- Cinnamon sugar
Instructions
- Line 2 baking trays with parchment paper.
- Preheat oven to 350 degrees F.
- With an electric hand mixer, standing mixer, or in a bowl with a spatula, blend the cake mix, eggs, and oil very well.
- For best results, chill dough for 30 minutes.
- Use a 1-tablespoon scoop to portion dough into rounded tablespoon-size balls.
- Roll the cookie dough balls in cinnamon sugar OR sprinkle cinnamon sugar on the balls arranged on the baking tray.
- Bake until the cookies are set, 10 to 12 minutes.
- Cool for 10 minutes before transferring to baking racks.
Notes
To make cinnamon sugar, mix ¼ cup sugar with 1 ½ teaspoons ground cinnamon.
